Pasta is, in general, one of the best choices when we want to make something easy but delicious. However, as long as they are embedded in our nutritional culture, there are little secrets to their cooking that may have escaped you.
The most common mistakes you most likely make:
- You do not combine the pasta with the sauce.
Indeed, "classic" spaghetti go almost with each sauce, but, the proper pasta can really take off a recipe. The general rule that you have to keep in mind is that the light, delicate and fluid-textured sauces are more suited to fine pasta, while the richest, tastier and thicker sauces find their ideal match for thicker pasta types.
- Do not put enough salt in the water you boil
So the secret is not to pinch the salt, nor the water. Pasta requires space to boil properly, which means you should use a large saucepan and enough water, well salted.
- You do not keep a little of the pasta water for the sauce
The water in which the pasta is boiled is rich in starch, which will make your sauce tie, giving it this wonderful texture that usually has the dishes in Italian restaurants. Just add 4-5 tablespoons to the boiling sauce and leave the starch to make its magic.
